Steamed Chicken Whole Wheat Wrap

Happy Hump Day! 🙂

Idk about you guys but I always have salads for my M3s (meal). They’re so simple and easy to make.

But today I wanted to try something different. I love wraps! But I’ve never made one, I’ve always ordered them when I’m out to lunch or my boyfriend makes my wraps.

This was incredibly easy and quick to make. The only thing that took a while was the chicken but you put it in the steamer and continue whatever you are doing!

Here’s the recipe for this delicious wrap:

1 whole wheat tortilla
1 steamed chicken breast (sliced)
1 1/2 cup of baby spinach
1/3 cup of corn
1/3 cup of baby tomatoes
1/3 cup onions
2 squirts of Dijon mustard
3 squeezes of fresh lime juice
Lemon pepper seasoning

My wrap skills are not up to par lol so I did what I could. This was definitely yummy and a great lunch option. I also paired this with Strawberry Serenity Kombucha and it was delish!

The Color Run

Hello everyone!

I am over-joyous to participate in The Color Run this summer! Now for all of you who do not know what The Color Run is here is a simple, quick video describing the run 😉

What is the Color Run?
The Color Run is a one of a kind experience that is less about speed and more about enjoying a color crazy day with your friends and family. Our events, are all about people of all different speeds, ages, shapes, and sizes toeing the start line. Whether you are a casual morning mall walker or an Olympic athlete, the 3 miles of the Color Run course will be the most enjoyable real estate you’ve traveled in a VERY long time.  You will love this Color Dash of fun!

How does it work?
The Color Run pretty much has 2 SIMPLE rules. 1. White shirts (any mostly white T will work great) mandatory at the start line and 2. Color plastered EVERYTHING at the finish!  Runner/walkers begin the 5k at the start line like a brand new pristine coloring book, they end looking like they fell into a Willy Wonka… tie dyed… vat of colored goodness.

What is the Color?
Each kilometer of the event is associated with a designated color.  1k is yellow, 2k is blue, 3k is green, 4k is pink, and the 5k finish is a “Color Extravaganza.”  As the runners/walkers hit the Kilometer COLOR RUNZones, they will be blitzed by our volunteers, sponsors, and staff with COLOR.  The color is a special “elf made” recipe of magical color dust.  All products are 100% natural and safe.  You can eat the stuff if you’d like (we have tried it and don’t suggest it, it is surprisingly high in calories and leaves a chalky aftertaste).  See the diagram below for the COLOR RUN ZONE specifics:

 

I am really excited for this 5k over the summer! They have a tour in the US you can take a look at The Color Run. I will be participating in the location in Ann Arbor, Michigan on August 5th, 2012. I can’t wait!!

My First 5K

Hello everyone, I’m really sorry I haven’t been posting! I’ve been busy with school work and working out. My last post was about my ambitions and one of them was to run a 5K.

Now a lot of people that know me know how much I detest running! I’m always out of breath, I always stop and take breaks and I end up quitting. It is true, I am not a runner but this is why it is one of my ambitions to become a runner. Believe it or not I actually like running now, I have learned how to control my breathing and pace myself so it’s not so much of a chore anymore.

I’ve been researching many areas near me for 5ks and unfortunately some are soon! As in April 15th soon, now I still want to complete it and push myself to do it but it will be tough and I will remind myself that it is ok not to achieve my goals of getting a good time.

Banana, Blueberry and Chia Overnight Oats!

Before I begin on this delicious recipe, I have been meaning to try these Overnight Oats for quite some time! I waited until I bought all the ingredients

(I have Coach’s oats delivered from amazon but in the apartment complex where I live the clubhouse closes super early Sunday night and I didn’t have time to pick up my package 😦 but I made it work)

So for these ONO’s (Paige’s way of saying Overnight Oats) I used:

•1/3 cups of oats

“May The Odds Be Ever In Your Favor”

“Wow! Where is a treadmill and a bow and arrow,” was what I kept telling myself after watching this movie.

 

This movie was amazing! I remember I kept pulling my boyfriends hands and squirming in my seat throughout this movie. I experienced happiness, disgust, fear, love, and hope in just 142 minutes. Now I don’t want to give anything away for those of you who haven’t seen it yet but all I have to say is get your booties to the theater asap!

Jennifer Lawrence was amazing as the main character, Katniss Everdeen. She truly was an inspiration to hit the gym and workout. I swear I have never wanted to hit the treadmill so badly before but after watching this movie I wanted to work out! If I was a tribute in The Hunger Games I sure would be the first to die because I am not fit to my capacity.

and it tells you what workouts they did to train for their roles and their diet. I will most definitely be keeping this in mind when I am working out in the gym.

 

This movie is amazing (I say that a lot) please go see it! Now I am starting to read the books and I’m already half way through!

My Ambitions!

Hello everyone!

This post is super late especially since we’re in the 3rd month of the new year but I recently just made my blog and I really want to have concrete ambitions to hold myself accountable.

Everyone has some type of goal that they want to achieve at some point in their lives; whether it be a New Years Resolution, a to-do list, a journal, or telling someone your plans. I’ve had so many journals and word documents with all my goals written but I would forget about them, lose interest and become lazy.

Goals are not my thing! I always feel like I’m in high school whenever someone tells me to write down my goals for this month, this year, or the future. Goals change every single second, minute and days. To me they are just another science project that in a week when I’m over with it I forget about it.

Ambitions: a strong desire to do something, typically requiring determination and hard work; desire and determination to achieve success.

My Ambitions

  • Run Run Run outside, inside, on a track, on a treadmill, in the park, around the neighborhood, with my boyfriend, with friends, to support a cause, because it’s a nice day, because I’m having a bad day, because I want my body to function properly, because I love my self
 
  • Drink more water, tea, fresh juices- juice my own oranges, apples, carrots, mangoes,etc
 
  • Get a good snoozzze; at least 7hrs every night 
 
  • Bootycall ; get some form of exercise when I wake up in the morning for at least 30 mins 5 days a week
 
  • Try new things to relieve stress; try yoga, go on a walk, take a new class at the gym, burn some candles and read a book, try a new recipe, talk to my friends and family
 
  • Be confident, don’t count calories
 
  • Ask for help when I think I’m over my head with challenges, especially from the TIU Community
 
  • Eat Lean, Green and Clean as much as 5 days a week
 
  • Don’t be too hard on yourself, everyone makes mistakes 
 
  • Do this for myself, because you want a healthier way of living, because you want to fit into your jeans comfortably and not try to hide your love handles, because you don’t want your arms to jiggle, because you don’t want to feel uncomfortable in a bathing suit, because you don’t want to keep pulling your shorts down, because you don’t want to feel weak, because you love yourself

 

Here’s to a healthier me. Wherever my life takes me I know that I have a strong supportive group behind me pushing me harder than ever, telling me not to quit not to give up because they’re facing the same things.

Thank you TIU for changing my life and making me want to be better.

Strawberry & Lime Water

I’ve had such a terrible week! School is so stressful, I’ve had exams back to back and next week is no better.

I haven’t been checking in or following TIU! 😦 No worries though tomorrow morning I get back on track!

I decided to add some fresh fruit to my water (overnight) to see if it spices it up. I love plain water but sometimes you want to overturn and put new spins on routine.

I added into my Strawberry-Lime Water:

-2 slices of lime (cut them in wedges)
-4 strawberries (cut in halves)
-32oz of water (I made this in my water bobble)

So easy, refreshing, yummy and satisfying. You should drink half of your body weight in water and why not spice it up and try adding fruits? 🙂

Hello everyone! It gets so hard to post almost everyday when you’re a full time student taking 16 credits, yikes!

Late Night For The Collegiate

Wow it is crazy what college students have to go through in a week! My spring break was last week and this week was back to classes and getting in the grind of things. This week I had 2 exams already and still have 2 more left. I believe college professors are on this earth to ruin our lives. Can’t they give us a break? I mean Michigan State is the #1 seed in the Western Division and we won the Big Ten Championship! C’mon give your students a break.

Everyone here in East Lansing, including me, is going nuts for the beginning of March Madness. Anyway the point of this blog was that as college students we stay up late..till 3am sometimes 5am or even the infamous all nighters.

I always get hungry when I’m awake late so I decided to make my own healthy dessert for late night cravings!

I added Chobani’s Strawberry Greek Yogurt, Bare Naked’s Heavenly Chocolate, Blueberries and Cinnamon.

It was really tasty and honestly felt like I was having a dessert with if course healthy filling ingredients!

Now wish me luck for my next two exams tomorrow.

Steaming!

I am absolutely excited to post this because this is my first steamer! Steaming foods is incredibly healthy for you and I’m glad that I get to experience this tasty new way of cooking!

I definitely wanted to try for dinner every kind of veggie that I bought..so I did LOL! I added baby carrots, asparagus, broccoli, string beans and already boiled chicken breast. I wanted to heat up the chicken breast but didn’t want to do that in the microwave.

The end result with brown rice! For an extra kick I added lemon and pepper seasoning to the chicken, veggies and rice. I also squeezed some fresh lime juice on everything and it was delicious!

I also used this meal as my M5 for the ToneitUp! Nutrition Plan. Hope you guys enjoy steaming foods as much as I do now!
